armour hash breakfast burritos

Ingredients

  • 1 Tbsp. butter
  • 4 eggs, beaten
  • 1 15-oz. can ARMOURŪ STAR CORNED BEEF HASH or ROAST BEEF HASH
  • 4 10-inch flour tortillas, warmed*
  • 1 cup shredded Monterey Jack or Cheddar cheese
  • Salsa
  • Sour cream

Instructions

  1. Melt butter in medium skillet. Add eggs and cook without stirring until mixture begins to set on the bottom and around edge. Lift and fold partially cooked eggs so the uncooked portion flows underneath. Continue cooking until eggs are cooked through, but still moist. Remove eggs from skillet. In same skillet, flatten hash with spatula. Cook without stirring for 8 minutes or until crispy on bottom. Turn hash and cook other side until browned and crispy. Add scrambled eggs back into skillet, breaking up large pieces. Place 1/4 of hash mixture on each warmed tortilla and sprinkle with cheese. Fold over sides and roll up. Serve with salsa and sour cream.
  2. *Tip: To warm tortillas, wrap in paper towels. Microwave on HIGH for 30 seconds.
